125g unsalted butter
100g dark chocolate broken into bits
300g thin cut marmalade
150g caster sugar
Pinch of salt
2 large eggs, beaten
150g self raising flour
Preheat the oven to 180C/gas mark 4
Put the butter into a heavy bottomed saucepan and put over a low heat to melt. When it’s just melted, stir in the chocolate. Leave for a moment to begin softening, then take the pan off the heat and stir until the butter and chocolate are both melted and nicely blended together.
Add the marmalade, sugar, salt and eggs. Stir and when everything is mixed together beat in the flour bit by bit.
Put the mixture into a 20cm springform tin which has been buttered and floured and bake for about 50 minutes or until a skewer comes out clean. Alternatively if cooking in an Aga, bake for approximately 55 minutes with the shelf on the bottom of the roasting oven and the cold shelf two runners above.
Remove from the oven and cool in the pan for about 10 minutes before turning out.
This is a simple cake to make, tastes delicious and with its combination of chocolate and orange makes a lovely addition to the Christmas festivities!
