4 pork loin steaks
2 tbsp olive oil
2 onions, chopped
1 tbsp wholegrain mustard
5tbsp apple sauce
300ml vegetable stock
Sprinkle the pork steaks all over with salt and pepper. Heat the oil in a frying pan, add the steaks and fry over a high heat, turning once, in order to brown both sides. Remove from the pan and set aside.
Add the onions to the pan and fry them for about 5 minutes until softened and slightly browned. Stir in the mustard, apple sauce and stock and bring to the boil.
Return the steaks to the pan and simmer in the sauce until they are cooked through.
Delicious served with colcannon or mashed potato and vegetables.
