In my opinion, the best way to make ravioli is to use a ravioli tray. You simply roll out two rectangles of pasta a little larger than the tray, place one on the tray, pressing it into the indentations, add your favourite filling, then put the second sheet of pasta on top, pressing down between the dips. Chill in the refrigerator, then turn the ravioli parcels out before cooking in boiling water.
